Where excellence begins
Our groves lie in the hills above Florence, 300 meters above sea level, where abundant sun and cool breezes meet due to the blend of Mediterranean and Continental climates. Our groves survived the devastating 1985 frost that nearly wiped out Tuscany’s olive oil production.
We are lucky to have great craggy hundred-year-old trees, a rare and beautiful sight in this area.
Rich in Antioxidants
Organic olive oil is packed with powerful antioxidants, particularly polyphenols, which help neutralize free radicals in the body. Free radicals can cause oxidative stress, leading to cellular damage and contributing to chronic diseases like cancer, diabetes, and cardiovascular issues. The antioxidant properties of olive oil also support skin health and overall immunity.
Supports Digestive Health
Olive oil, particularly extra virgin, supports digestive health by stimulating the production of bile and digestive enzymes, which aid in breaking down food and absorbing nutrients. Its healthy fats promote smoother digestion and help maintain regular bowel movements, contributing to overall gut function and comfort.
Anti-Inflammatory Properties
Extra virgin olive oil is rich in natural compounds like oleocanthal, which has been shown to act similarly to ibuprofen in reducing inflammation. Regular consumption can help manage chronic low-grade inflammation, supporting long-term health and helping the body maintain its natural balance.

Frequently Asked Questions
Our olive oil is certified organic, produced without synthetic fertilizers, pesticides, or herbicides. We adhere to sustainable farming practices to ensure the highest purity and quality.
Extra virgin olive oil (EVOO) is the highest quality, made only by cold-pressing olives without chemicals or heat. It has the lowest acidity (≤0.8%), preserves natural antioxidants and flavor, and offers superior taste and health benefits. Regular olive oil is usually refined and blended, with a lighter flavor and fewer nutrients.
Store olive oil in a cool, dark place away from light, heat, and oxygen, ideally in dark bottles to protect it from light exposure. Avoid refrigerating, as cold temperatures can cause the oil to congeal and lose its fresh aroma.
When stored properly, our organic olive oil maintains optimal quality for up to 18 months from the harvest date. It’s best to consume it within this period for the freshest flavor and maximum health benefits.
Use extra-virgin olive oil to drizzle on salads, pizza, or ice cream; marinate with citrus and herbs; sauté and roast; bake by replacing butter; and finish dishes like steak or risotto for rich flavor and aroma.
Drizzle over bread or bruschetta, fresh salad, grilled vegetables, steaks, pasta, gelato.
Fresh EVOO handles ~210 °C / 410 °F. So sauté, roast or shallow-fry with confidence, then finish with a raw drizzle.
One to two tablespoons usually transform a plate; think of it like a fine wine: quality over quantity.
Keep it tightly closed in a cool, dark cupboard; avoid direct heat, light and air..
Cold causes natural waxes to crystallise; gentle warming restores clarity and flavor unaltered.
